Sparkling Luxardo Hemmingway

Whenever I get the opportunity to play around with a Daiquiri variation I am all in, I absolutely love using the white rum base and building something balanced and delicious from there. The Hemmingway Daiquiri is one that just has a slight variance but makes such a great difference from the classic but I decided to increase that difference and play around a little.

I had a jar of Luxardo Maraschino Cherries on my back bar and always love how delicious the decadent cherry syrup can be when I use just a little bit in a cocktail that needs a little something. Do you think they have alcohol in them? They don’t! They are candied and steeped in a syrup made of cherry juice and sugar. They are all-natural and fun fact – made by distilling the fruit’s leaves, stems, pits and skins. I also used the classic Luxardo Maraschino Liqueur, an essential ingredient in many classic cocktails, because it is the proverbial glue to this cocktail that holds the flavor together.

1.5 ounces rum

½ ounce lime juice

½ ounce ruby red grapefruit juice

½ bar spoon cherry juice from Luxardo Cherry jar

½ ounce Luxardo Maraschino Liqueur

Champagne (to top)

Add all ingredients to a shaker with ice (except Champagne)

Shake mixture then strain into a coupe glass

Top with Champagne

Garnish with a Luxardo Cherry
