Ingredients

250ml (1 cup) strong espresso coffee, cooled

80ml (1/3 cup) coffee flavoured liqueur

6-8 ladyfinger/sponge finger biscuits

2 eggs

55g (1/4 cup) brown sugar

1 x 250g container mascarpone cheese (at room temperature)

125ml (1/2 cup) Baileys Original Irish liqueur

Dark chocolate (for garnish)

Steps

Pour the espresso and liqueur in a mixing bowl. Stir until combined.

Dip the ladyfinger biscuits one at a time into the espresso/liqueur mixture. Ensure that they're saturated, but not too much (otherwise they'll start to fall apart).

Line the sides of four 375ml (1 1/2 cup) serving glasses with the ladyfinger biscuits. Then drizzle with leftover espresso/liqueur mixture.

Separate the eggs, putting the yolks and the whites into different bowls.

Beat the egg yolks and brown sugar in a mixing bowl with an electric beater. Keep going until this mixture is thick and creamy.

Add the Baileys and mascarpone to the egg and sugar mixture. Beat together until everything is combined.

Clean your electric beater. Then use it to beat the egg yolks until they're thick and have soft peaks.

Fold half of the egg whites into the Baileys mixture until combined. Repeat with the other half of the egg whites.

Scoop the mixture into each glass. Distribute it evenly so that each cup is about 3/4 full.

Cover each glass with plastic wrap. Let it chill in the fridge for at least 6 hours.

Grate dark chocolate and sprinkle this on top of each tiramisu before serving.

Tips

For the best presentation, grate the dark chocolate as finely as possible, and give each glass a nice wipe after taking them out of the fridge.
